Simple Summer Salad

The Tasty Thymes Two team loves a quick and easy Greek salad. This salad is loaded with fresh vegetables and herbs from the garden and is topped with crumbles of feta cheese and dressed in a zesty herb vinaigrette. Serve this salad on its own or as a side for just about any of your summer favourites including grilled chicken, fish, or stuff in pita bread for a perfect summer sandwich.


Recipe:


Ingredients

  • 4 cups cherry tomatoes cut in halves

  • 1 large cucumber, diced

  • 1/2 a red onion, diced

  • 4 cups bell peppers (red, orange, green and yellow), chopped

  • 1/2 cup fresh/ canned corn

  • 1/2 cup pitted olives (green/black), chopped

  • 1 cup crumbled feta cheese

  • 3 tablespoons fresh lemon juice

  • 2 teaspoons red wine vinegar

  • 7 tablespoons extra virgin olive oil

  • 1 teaspoon fresh chopped garlic

  • 1 teaspoon fresh oregano

  • 1 teaspoon fresh dill

  • 1 teaspoon cayenne pepper (optional)

  • freshly ground pepper and salt to taste


Instructions


Vinaigrette

Whisk together olive oil, lemon juice, vinegar, garlic, oregano, dill, cayenne pepper, salt and pepper until well blended.


Salad

In a bowl, combine the tomatoes, cucumber, corn, onion, peppers, and olives. Toss in dressing and sprinkle with feta cheese.
