Apple Cake

As we usher in Autumn, it is only fitting that we begin to transition our palettes to the wonderful flavours of the season. This apple cake does just that. The tart apples combined with sweet, woody, spicy and aromatic cinnamon, nestled in a moist & fluffy cake, topped with a crispy golden crumble will surely satisfy your sweet tooth.


RECIPE:


INGREDIENTS

Cake

  • 1 cup all-purpose flour

  • 1 teaspoon baking powder

  • 1/4 teaspoon salt

  • 1/2 cup unsalted butter, at room temperature

  • 2/3 cup granulated sugar

  • 2 large eggs

  • 1 teaspoon vanilla extract

  • 2 baking apples, peeled, cored and cut into 1/2-inch cubes

Crumble topping

  • 1 cup all-purpose flour

  • 1/2 cup rolled oats

  • 1 cup sugar

  • 2/3 firmly packed brown sugar

  • 1/2 teaspoon ground cinnamon

  • 1/4 teaspoon salt

  • 1/2 cup cold unsalted butter



INSTRUCTIONS

  1. Preheat the oven to 350°F. Grease a 9-inch cake pan with butter or nonstick cooking spray.

  2. In a small bowl, whisk together the flour, baking powder and salt.

  3. Using a handheld mixer, cream butter and granulated sugar until light and fluffy for about 2 minutes. Add the eggs, one at a time. Beat in the vanilla. Add the flour mixture and mix on low speed until just combined. Using a rubber spatula, fold in the chopped apples.

  4. Pour batter into the prepared pan.

  5. For crumble topping, add flour, sugar, oats, brown sugar, cinnamon, and salt in a food processor. Pulse several times. Place in butter and pulse until the mixture looks like fine crumbs. Sprinkle on top of cake batter.

  6. Bake for about 40 minutes, or until the cake is golden and a toothpick inserted into the center comes out clean. Allow the cake to cool before serving.

  7. Serve with vanilla or rum raisin ice cream and ENJOY! :) :)
