Blueberry Orange Cream Cheese Loaf

This blueberry orange cream cheese loaf is a quick, easy and a super delicious Summer treat to prepare. It's loaded with fresh juicy blueberries, fragrant orange zest and creamy & smooth cream cheese. The icing on the cake (literally) is topping this yummy loaf with beautiful and vibrant edible flowers.
RECIPE:
INGREDIENTS
- 2 Tbsp all purpose flour
- 2 cups fresh blueberries
- 1 cup butter softened
- 8 oz softened cream cheese
-1 1/2 cups sugar
- 1 teaspoon orange zest
- 1/2 tsp vanilla extract
- 4 eggs
- 2 cups all purpose flour
- 1 1/2 tsp baking powder
- 1/2 tsp salt
INSTRUCTIONS
1. Preheat oven to 350 degrees F.
2. In a mixing bowl combine blueberries with 2 Tbsp flour and set aside.
3. In another bowl cream together butter, cream cheese, orange zest, sugar and vanilla. Add eggs, one at a time, beating well after each addition.
4. In another bowl combine the rest of the flour, baking powder and salt. Slowly mix into wet batter until combined. Fold in blueberries.
5. Pour the batter into two greased 9'' x 5'' loaf pans and bake for approximately 45 minutes or until a toothpick inserted into the middle of the loaves comes out clean.
6. Rest loaves on wire rack for 15 minutes before serving. Top with edible flowers and enjoy!
