Greek Pasta Salad

The Tasty Thymes Two team are HUGE fans of Greek salad! The combination of ripe, sweet & juicy cherry tomatoes, salty olives & feta cheese, crisp cucumbers, hearty mixed beans, velvety smooth olive oil and an assortment of fresh herbs from the garden is a flavour like no other! We decided to kick it up a notch by adding some tender, curly & colourful noodles. This dish is quick, easy, and always a crowd pleaser.


To prepare this dish you will need the following ingredients:


- 1 package curly noodles

- 1 medium English cucumber, diced

- 1 pint cherry tomatoes, haved

- 1 can mixed beans, rinsed

- ½ cup sliced pitted olives

- ½ cup feta cheese, cubed

- ⅓ cup red onion, diced

Dressing

- ¼ cup red wine vinegar

- ⅓ cup olive oil

- ½ teaspoon garlic powder

- 2 teaspoons fresh oregano, finely chopped

- 2 teaspoons fresh rosemary, finely chopped

- Salt & pepper to taste

- 1 teaspoon crushed red pepper flakes (optional)


Instructions

  1. Whisk together dressing ingredients.

  2. Cook pasta according to package directions.

  3. Combine all ingredients in a bowl, add dressing and toss.

  4. Refrigerate for at least 1 hour before serving.
