Mediterranean Shrimp Pasta

This mediterranean shrimp pasta is hearty, healthy, comforting and always a crowd pleaser!


Recipe:


Ingredients


- 1 package of linguine

- 2 pounds uncooked shrimp, peeled and deveined

- 1/2 cup white wine

- 1 small onion, chopped

- 6 cloves of garlic, minced

- 8 tablespoons olive oil

- 2 cups red and orange peppers

- 2 cups black and green olives

- 2 cups cherry tomatoes

- 1/2 a can mixed beans

-1 teaspoon dried oregano

- 1 cup feta cheese

-1/2 cup fresh parsley

- pinch of salt and pepper to taste

-1/2 teaspoon crushed red pepper flakes (optional)

-3 tablespoons fresh lemon juice


Instructions


  1. Cook linguine according to the package directions.

  2. In the meantime, heat a large skillet with olive oil and saute onion and shrimp until the shrimp turn pink. Add garlic and cook for an additional minute. Stir in peppers, olives, tomatoes, beans, pepper flakes, oregano, wine, parsley , salt and pepper. Reduce heat.

  3. Drain linguine and reserve 1/2 cup pasta water. Add linguine and reserved water to skillet.

  4. Stir in feta and lemon juice

  5. Sprinkle finished product with fresh parsley and serve!
