Savoury Zucchini Muffins

Looking for delicious ways to use your garden zucchini?! Well look no further. These savoury zucchini muffins are fluffy, filling, and packed with flavour!


Recipe:

Prosciutto, 1/2 cup

Mortadella, 1 cup

Mozzarella, 1/2 cup

Grated parmigiano, 1 cup

Grated zucchini, 1 cup

All purpose flour, 3 cups

Baking powder, 3 tablespoons

4 eggs

Vegetable oil, 1/2 cup

1 small jalapeno pepper finely diced

1 sprig of fresh rosemary

A pinch of salt and pepper to taste

Directions:

In a bowl, beat the eggs and add the vegetable oil, prosciutto, mortadella, parmigiano, mozzarella, jalapeno pepper, rosemary, salt and pepper. Mix all together. In another boil add the flour and baking powder and mix well. Slowly mix in your dry ingredients into the wet ingredients. Divide the dough into little balls and place in a non-stick muffin pan. Bake in a preheated oven at 350 degrees F (150 Degrees C) for 25-30 mins. Serves 18-20 muffins. Enoy! :) :)
