Soft and Chewy Pistachio Cookies

These delightful green, soft and chewy pistachio cookies are the perfect way to satisfy your sweet tooth. In order to enhance the visual presentation, top these cookies with edible flowers. Some of our favourites include: marigolds, nasturtiums, bachelors buttons, and violas.


RECIPE:


Ingredients

  • 1/2 cup unsalted butter

  • 3/4 cup granulated sugar

  • 1 tsp. vanilla extract

  • 1 large egg

  • 1 1/4 all-purpose flour

  • 1 box instant pistachio pudding mix

  • 1/2 cup shaved dark chocolate

  • 1/2 tsp. baking soda

  • 1/2 tsp. salt

Instructions

  1. With an electric handheld mixer, cream together butter and sugar. Add the vanilla and egg.

  2. Add the pudding mix, flour, baking soda and salt.

  3. Add in shaved dark chocolate and mix well.

  4. Place dough in the refrigerator for at least 30 minutes.

  5. Form dough into balls, spacing out 2 inches apart on wax paper lined cookie sheet.

  6. Bake at 350° for 10 minutes.

  7. Top with edible flowers and enjoy!
